A Snitty or Schnitz, whatever nickname you have for it, it’s classic pub grub and super easy to make at home on a budget. If chicken breast is on special you can prepare a large batch, portion and freeze too.
Ingredients – (makes 6)
2 chicken breast fillets
3/4 cup of plain flour
1 teaspoon of garlic powder
1 teaspoon smoked paprika
1 tablespoon vegeta gourmet stock
2 cups of Panko crumbs
Oil for frying
Make 3 length way slices in each chicken breast. Depending on the thickness of the chicken you may need to flatten slightly to achieve 1cm thick fillets. Lay on a sheet of baking paper and use a rolling pin to pound out the chicken.
Whisk the eggs on a small plate and set aside.
Combine the flour and herbs, mix well and place on another plate, and place the Panko on another.
Dip the chicken into the flour mix, shake off excess and then into the egg and then into the Panko crumbs
Deep or shallow fry at 180c or you can do a bread test to ensure the oil is hot enough, and cook for 3-4 minutes each side. You can oven bake for a healthier option too.
Enjoy with mash and veggies or chips and salad.
