Easy Pikelet Recipe
Thick and fluffy pikelets are perfect for breakfast and ideal for the lunchbox. You can make them as small as you need to fit inside a small bento box compartment, and they also freeze and defrost beautifully making them ideal for a back to school bake off.
This recipe also only requires a small handful of ingredients you more than likely already have on hand so incredibly budget friendly.
1.5 cups of self-raising flour
1 cup of full cream milk
Optional – 1-2 tablespoons of sugar.
Whisk the eggs and milk in a large bowl, add the flour (and sugar if you opt for it) and whisk until thick and combined.
On low-medium heat, spray a non stick pan with cooking spray (you can use butter if you like too) and add 1/3 of a cup of mixture to the pan. They won’t get many bubbles, so flip after one or two appear or when golden. Once flipped they will puff up, they are so light and fluffy.
Serve hot with butter, jam, Nutella or honey etc.
