Pulled Pork & Slaw Burgers
My kids start flossing like looneys when they see Pulled Pork & Slaw Burgers on our meal plan, they are easy and loved by all.
You’ll need pulled pork (thanks captain obvious) and you can find our slow cooker recipe here.
I like to use Aldi brioche buns, but you can use any type of roll you like and here’s how to make the slaw.
1/4 savoy cabbage finely sliced
2 large carrots grated
1/2 a Spanish onion finely sliced or two spring onions finely sliced
1 tablespoon white vinegar
1 tablespoon of water
2 tablespoons whole egg mayonnaise
Salt and pepper to season
I like to use a julienne peeler for the carrots but grated it fine too, and the spring onions seem to be better for younger children as they aren’t as potent as onion.
Add the salad ingredients into a bowl, mix the dressing separately and then into the cabbage mix and toss with a pair of tongs until the dressing is evenly distributed.
Add a good amount of slaw to the burger, pile high with pulled pork and enjoy.
These burgers are also ideal to serve at a birthday party or gathering too as you can cook the pork in advance and serve in the slow cooker, add the buns to a basket and a big bowl of slaw and your guests can serve themselves.
