These Lamb meatballs are quick and easy, absolutely delicious and can be used in so many ways. My children also like them cold so they make a great sandwich alternative for the lunchbox too.
This is also the recipe we use in our Lamb, Halloumi and pistachio salad with hummus yoghurt dressing.
Other ways you can serve these meatballs –
As is with a side of mash and steamed veggies
Add to wraps with hummus and salad
Serve with BBQ meat, potato bake and salad
Serve tappas style with flatbreads, antipasto and feta.
500g lamb mince
1 teaspoon of smoked paprika
1 teaspoon Vegeta gourmet stock powder
2 cloves of fresh garlic crushed
3 tablespoons panko breadcrumbs
Olive oil for cooking
To a large bowl add all ingredients and mix well using your hands. You can do this step in advance, just cover the bowl and into the fridge until you’re ready to roll.
Roll the meatballs into small balls (you should get between 30-32 balls) and fry in a little olive oil over medium heat. Move the pan often to ensure they don’t overcook on one side and they should be ready in 10-11 minutes.
They are tender and full of flavour and a massive hit with our kiddos.
