The ultimate winter comfort food and perfect for summer too as you don’t need to crank the oven when using a slow cooker. I love set and forget dinners and only ever cook corned beef in the slow-cooker for best results.
1.2 kilos corned beef
6 cups of water
2 tablespoons white vinegar
1 tablespoon of brown sugar
One brown onion
1 celery sick sliced
1 bay leaf
Place the carrots, celery & onion in the base of your slow cooker. Add all dry ingredients, pop on the corned beef and then add the water and vinegar.
Cook on high for 7 hours and serve with white sauce, potatoes and steamed veggies. If you have leftovers, it’s easier to slice once cold to use for sandwiches.
