Coles Vietnamese Chicken Pho Broth Review
As a huge fan of Vietnamese food but having limited talent and being completely time poor, creating an amazing batch of Chicken pho was merely a daydream for this working mum of three.
Imagine my absolute delight in seeing that Coles had released their own version of the aromatic broth that tickled my taste buds! I just had to put it to the test.
2 cups of Coles Chicken Pho Broth
Half a coles roasted chicken
120gr rice noodles
½ bunch of coriander – leaves picked
½ bunch mint, leaves picked
1 cup of bean shoots, washed
1 long red chilli, thinly sliced
½ lime, cut into wedges.
1. Pull the meat off the chicken, and set aside. Be careful, and use tongs or a fork as the roasted chickens can be very hot. Discard bones, skin and stuffing.
2. Heat the broth in a pot to a simmer and add in the rice noodles, cooking as per packet instructions. Do not drain.
3. Add the chicken and continue to simmer until the chicken is heated through (approx. 1 to 2 minutes)
4. Serve and enjoy! I plated my Pho in a bowl, and served the lime wedges, herbs, bean shoots, and chilli on a plate alongside. I also added a small amount of sesame oil and soy sauce to taste.
Result? An easy to prepare, decent tasting version of my favourite Vietnamese dish, and minimal cleaning up afterwards. It’s a firm winner for me. We’ll be having this one again.
